When alginate encounters calcium ion, it can exchange ions quickly and form gel, which has heat irreversibility. High G-type alginate gel is hard but fragile, while high M-type alginate gel is the opposite, with good flexibility but low hardness. Adjust the two ratios to produce the same strength gel.
